Intense fruity It was Luca De Filippo who gave this oil the name Ostro, a name dear to the seafarers, the name of the wind that blows from the south and swells the sails to bring back home and which curiously combines both with the toponymy of the estate than with the proximity of the sea. Shiny green with golden reflections. Dense and enveloping. It has an impressive olfactory power: it amazes the sensation of green, fresh, herbaceous with clear hints of wild herbs and a delicate note of celery. On the palate it explodes with bitter hints of thistle and artichoke leaf. On the palate, it enters decisive and persistent with an amazing spicy finish reminiscent of pink pepper and an interesting reference to rocket, typical of Leccino. A strong oil, suitable for large dishes, especially for game and red meat. -

Soft and purified skin thanks to the remineralizing and antioxidant properties of green clay. Produced by the erosion of rocks and made up of very small grains, green clay contains silicates, aluminum and water. In addition to its absorbing power, it also has a remineralizing action thanks to the presence of minerals such as magnesium, calcium, sodium, potassium, iron and aluminum, which are transferred to the body's cells by osmosis. Green clay also has antioxidant properties since it is able to bind to free radicals, responsible for aging, and finally performs a healing and disinfectant action on wounds, promoting blood clotting and skin regeneration. An important ingredient that, combined with cold saponified extra virgin olive oil soap, make it excellent in the treatment of oily, combination or impure skin. -

Light / medium fruity The De Gregoris olive farm is located in Sonnino, in the province of Latina, an ancient village of medieval origin built on the top of the Sant'Angelo hill, 450 meters above sea level, in the Ausoni mountain range. A place rich in history and mysteries, hardly visible and not very accessible from any direction, a refuge for terraced olive groves of exclusively itrana varieties. In this fascinating landscape, Gregorio De Gregoris, in 2011, decides to leave the construction sector to return to the origins in what has always been a family tradition: olive growing. "Olitrana" is Gregorio's uncompromising point of view on a quality extra virgin olive oil. Alone as an Itrana variety, this extra virgin olive oil has a high level organoleptic profile, balanced and persistent bitter and spicy, accompanied by an elegant hint of tomato, the typical and unmistakable one of the Itrana variety. The Itrana olive tree is a very vigorous and rustic plant typical of the Pontine territory, which produces a fruit with an unmistakable taste with a double value, for the production of oil and table olives, one of its peculiarities is the decidedly late ripening: February- March. While the green Itrana is harvested in November, when it begins to ripen, the black is harvested at the end of maturation, around March, and processed as tradition dictates: exclusively with water and sea salt. Medium fruity "Peranzana" is a pure cultivar, not a hybrid. The olive is medium in size and the extra virgin oil produced from the Peranzana cultivar is of low acidity and very balanced taste. On the nose there is a distinct fruity scent of olive with clear herbaceous and floral notes of green tomato, grass and freshly threshed wheat. The palate is expressed with a sweet fruity flavor with balanced notes of bitterness, which is associated with a slightly spicy aftertaste with slight sensation of almond and artichoke. Thanks to the organoleptic peculiarities and the very low acidity content of the extra virgin olive oil obtained from it, we managed to obtain the coveted PDO (Protected Designation of Origin) recognition. The "Peranzana" in addition to being intended for processing and oiling, is recognized as a dual-purpose product in that it can be used as a table olive of particular value. Certifications: As artisans of the earth, Agricola De Cesare lovingly respects the times and rhythms required by the places that host the delicacies at the base of product processing, aware that every fruit, seed or inflorescence has a story to tell: the same story that also speaks of our land. The olive mill has undergone challenging and successive innovative investments. As of 2019, in fact, we can boast the realization of an artisanal crusher that features high quality and productive tools: we are talking about the Sigma 8 Series Decanter from Alfa Laval. This modern ' two-stage' technology guarantees exceptional performance in terms of extractions and is equipped with special sensors that allow constant temperature control in real time at the various stages of olive processing: washing by washing machine, crushing, gramoling, extraction by centrifugation, separation of oil from oil must, tube-to-tube exchanger. Regarding the last stage, it should be pointed out that the concentric tubes have the task of conditioning the temperature of the paste at the outlet of the crusher during the passage to the gramola. Heat exchange occurs with respect to the inlet temperature with the specific task of cooling the fluid. It should be pointed out that the crusher was built following the new policies of Industry 4.0. The term refers to industrial automation, which indicates a set of technological procedures aimed at improving working conditions, creating new business models, and increasing the quality and productivity of plants. Our products are our strength as they are always controlled, certified and guaranteed. Olive season: 2023/2024
