The Itrana olive tree is a very vigorous and rustic plant typical of the Pontine area, which produces a fruit with an unmistakable taste with a dual use, for the production of oil and table olives. Local tradition provides for processing only with water and salt, the so-called brine. The "Green" olive is harvested approximately in November, when it begins to ripen, and processed as tradition dictates: exclusively with water and sea salt. The firm pulp detaches perfectly from the stone (Spiccagnolo in technical jargon) and a good production results in a perfect "Spiccagnolo" and a light bitter tone that joins the acetic cue of natural fermentation. Medium fruity It is an organic extra virgin olive oil obtained from selected olives of own cultivation of the Leccino, Olivastra and Raggiolo varieties. An oil that speaks of Tuscany, of harsh and hard lands to cultivate, where the scorching summer sun and very little rain make the olives grow very slowly and in extreme conditions. It has a very bright golden green color. Right from the opening of the cap, this oil emanates persuasive and very fresh aromas of aromatic herbs including sage, rosemary and fern. Light fruity The Tonda di Cagliari is a cultivar present throughout Sardinia and with particular diffusion in the southern area of the island. It was selected by Accademia Olearia among its productions to be one of the protagonists of the project to enhance typical Sardinian cultivars. Tonda di Cagliari is a monocultivar that combines intensity and balance, showing a strong but non-invasive character, therefore bitterness and spiciness are present with hints of fresh fruit and cooked vegetables, which remain pleasantly present on the palate. The delicacy of its fruitiness makes it suitable for delicate preparations such as medium-savoury fish, molluscs and salads. An ideal travel companion in signature cuisine, in particular we suggest pairing it with a typical dish of the Sardinian tradition such as fregula with mushrooms and wild herbs.
