Historical context and birth of the company

Palazzo di Varignana was founded in 2015 with the ambitious project of offering a line of products inspired by the historical vocation of the area, directly cultivating extensive farms surrounding the Resort thanks to its own farm. A constantly evolving project in compliance with organic farming techniques, in harmony with the beauty of the territory and attentive to cultivating the future. The passion that the founder of Palazzo di Varignana has for the olive tree and the history of this territory have led to the recent construction of new modern and rational olive groves of over 100 hectares, intended for the production of a high quality extra virgin olive oil. Love and respect for history and for the territory have led to the choice of the most representative varieties of Emilia Romagna, most suited to the climate. The care and attention to each essential step in making the oil, from cultivation to packaging, are the primary goal to make the oil special.

Technical contents

Palazzo di Varignana today extends over 250 hectares of agricultural land, which cover a large area of ​​the hill south of the Via Emilia, in the Varignana hamlet in Castel San Pietro Terme. Among these, 120 hectares of olive groves give life to a precious extra virgin, which represents excellence in the panorama of Italian olive oil.

To the olive groves are added 35 hectares of vineyards, in which mainly native grapes are grown, three thousand meters of vegetable garden, one hectare of almond groves, a strawberry grove, an orchard of apples, pears, apricots and cherries, 4000 meters planted with goji, a terraced vegetable garden with 42 different aromatic herbs and a very original and rare production of saffron.

The fruits of this land, in addition to representing the basis of the cuisine offered within the Resort, have given rise to a line of products under the Palazzo di Varignana brand, which includes 5 types of excellent extra virgin olive oil.

In Varignana the olive harvest takes place early and slightly earlier than the optimal ripening period; this choiceo allows to obtain oils rich in polyphenols: natural antioxidants contained in olives.
The oils reflect these characteristics of aromas and freshness typical of green olives in their organoleptic profile.
