TRAMA is the latest passionate challenge of the Alessandro Palombelli farm: looking to the past with new eyes, for agriculture aimed at the future and increasingly in balance with the environment.

Senatore Cappelli wheat: selected in the early 1900s, it is now rediscovered as a cereal of excellence due to its characteristics. With a height greater than that of common wheat, it does not tolerate fertilization and is grown without pesticides. It is rich in nutrients due to the presence of very deep roots, which draw from the deeper layers of the soil.

Senatore Cappelli semolina: stone ground. Without preservatives and without chemicals, low in gluten, it is rich in proteins, lipids, amino acids, vitamins and minerals. The products obtained from its processing have an intense flavor and aroma.

Senatore Cappelli semi-wholemeal artisan pasta: with a reduced gluten content, it is well digestible and also suitable for people with slight intolerances. Low temperatures and slow drying keep the nutritional principles and organoleptic properties of the grain intact. With an aromatic and persistent taste, it has a good cooking resistance and remains “al dente” thanks to the compact structure of the wheat grains.
