Historical context and birth of the company

We are in Sonnino, an ancient village of medieval origin (8th century AD) built on the top of the Sant’Angelo hill at 450 meters above sea level, in the Ausoni mountain range, with a landscape alternating with barren slopes, Mediterranean scrub, olive groves, holm oaks, oaks and junipers.
A fascinating place rich in history and mysteries, hardly visible and not very accessible from any direction; a valid refuge from the raids of the bloodthirsty Saracen pirates first and from the brigands after.
In the nineteenth century, in fact, Sonnino became known for being the home of brigands, such as the legendary Gasbarrone who lived until 1880.
Due to economic needs, a large part of the Somninese population moved to the lowest and flattest area of ​​the country, giving rise to flourishing agricultural and livestock activities as well as industrial sectors connected to them.

Here, in the locality called Capocroce, Gregorio De Gregoris in 2011 decided to leave the construction sector to return to the origins in what has always been the family business, cattle breeders for 2 generations, who have become olive growers over the years.

Gregorio has contributed to the transformation of the olive processing and extra virgin oil extraction processes, moving from a traditional system to a modern system to finally arrive at a quality product.

De Gregoris extra virgin olive oil is the result of olive groves only of the itrana variety, which overlook the sea from their terraces in rough stone, known as dry stone walls.

These typical characteristics of a territory, particularly suited to olive growing, make Gregorio’s product unique, an extra virgin olive oil with a high level organoleptic profile, balanced and persistent bitter and spicy accompanied by an elegant hint of tomato, the typical one. and unmistakable, of the Itrana variety.

Technical contents

Gregorio De Gregoris, to date, manages a property consisting of 3 thousand olive trees exclusively of the Itrana variety, at about 400 m.s.l.m.
Since this is an olive-growing landscape of terraces and dry stone walls, mechanization is reduced to a minimum and the olive harvest is done manually, with the help of electric shakers, at the right time of maturation and veraison of the drupe.
The transition to the mill is immediate.
The company oil mill is a continuous cycle, with 3 phases, Pieralisi technology.
