Francesco Fiortini and his father Sebastiano in the Chocolart laboratory in Itri have created another delight for all Oliocentrici friends: chocolate olives.
They are the result of years of experimentation, study, comparison with olive growers, Frantoiani and expert tasters.
The preparation takes about 10/12 days from the time of purchase of the olive (Itrana in brine), this is pitted and candied, according to the same procedure used for fruit, and then covered with chocolate. The types used are two: an extra dark of the Trinitario variety and a 70% dark chocolate of a single origin Cru from Venezuela.
A contrast of flavors that you cannot give up in moments of relaxation.
