In the elegant setting of the Bolognese hills, the ancient residence of Palazzo di Varignana was born in 1705, originally Palazzo Bentivoglio, renovated respecting the ancient charm of its history. Around the Villa, now a luxury resort, the complex is spread over 30 hectares of land divided among vast green spaces, parks and water sources. It is among these breathtaking views that the founder of Palazzo di Varignana, passionate about olive growing, has created new olive groves for the production of a high quality extra virgin olive oil.
Like Claterna, a monovarietal of Ghiacciola extra virgin olive oil, the indigenous variety among the most representative of Emilia Romagna, light bitter and spicy and prevalent hints of tomato and artichoke and aromatic herbs.
