Paolo Cassini is an attentive and passionate producer, proud of his centuries-old olive trees, exclusively of the Taggiasca variety, which he grows with his family on Isolabona, an “island” in the western Ligurian hinterland.
The oil from the Taggiasca variety is among the best known Italian in the world despite the restricted production area. How to recognize the taste-olfactory characteristics typical of this cultivar?
