Everything originates from the olive groves in Contrada Scintilia about twenty kilometers from the Valley of the Temples in Agrigento.
The Francesco Di Mino farm, for about a century, has been following the family olive groves with great passion, from father to son, for three generations, producing a high quality extra virgin olive oil, maintaining the values ​​of tradition while evolving into extraction technology. The olive groves, of the Nocellara del Belice, Biancolilla and Coratina varieties, are grown in a natural way, without any use of chemicals and in compliance with the morphological characteristics of the land, attentions recognized by the certifications of BIO and PGI products. Sicilian PGI organic extra virgin olive oil, from Biancolilla variety olives only, is a balanced extra virgin olive oil, characterized by light fruity, light bitterness, medium spicy. It has fruity herbaceous notes with hints of apple and almond flowers, an initial sweet impact that then explodes on the palate.
Versatile raw and cooked, ideal with dishes based on seafood specialties, it fully enhances the characteristics without overpowering the flavor. Also very good for flavoring fresh cheeses and perfect for flavoring simple sweet doughs.
